  1. Peel and quarter the potatoes and bring them to boil in a large pan of water

  2. Cook for 20 minutes or until tender, then drain and cool slightly

  4. Preheat the oven to gas 6 / 200C / 400ëF and grease or line a baking tray with parchment paper

  5. Spoon the potato mixture into a piping bag with a wide nozzle attached
