  1. Place the leeks and pork belly meat block into a pressure cooker, add enough water to submerge the pork, and cook over a strong heat until the pressure cooker knob spins around.

  2. Once the pressure cooker knob has started to move around, reduce to low heat. Cook for 20 minutes, turn off the heat, and steam-cook for 10 minutes with the lid on.

  3. Open the knob and release the pressure, take out the pork, and throw out the water and leeks. Wash the pork clean in 105-120ÎçF/40-50ÎçC warm water.

  4. After washing the pork clean in warm water, cut into 6 pieces, and wipe the inside of the pressure cooker clean.
