  1. In a small bowl, blend together butter, oil, garlic, salt and pepper.

  2. Spread over all surfaces of steak.

  3. In another bowl, combine croutons and cheese, stirring to blend.

  5. Place steak in a brown paper bag.

  6. Fold up open end and secure tightly with staples or paper clips.

  7. Place bag on a rimmed cookie sheet (to catch juice of steak which will run out during cooking).
