  1. Marinate fish in orange juice and ginger for 1-4 hours.

  2. Spray a saute pan that is just large enough to fit the salmon with non-stick cooking spray. Add mandarins and their juice to the pan. Save a few slices for garnish. Toss fish with enough oil to cover and season with dried spices. Place atop mandarins. Bake at 350ë for approximately 10-15 minutes or until thermometer reaches 145ë. Baste with hoisin sauce during last five minutes of cooking.
